Wir hatten einen wunderschönen Spielabend mit Freunden und bei der drückenden Sommerhitze war grillen angesagt, allerdings hat sich um den Platz am Grill diesmal wirklich niemand geprügelt. Dazu habe ich leichte Sommersalate gemacht. Der eine Salat ist wirklich sehr schnell und unkompliziert vorzubereiten und alle Gäste waren begeistert und wollten das Rezept. Ich kann somit eine unbedingte Empfehlung aussprechen für den
Sweet Summer Salad von Ottolenghi!
Leider habe ich kein eigenes Bild gemacht und das obige Bild von der Internetseite ist nicht ganz zutreffend. Durch die Salatsauce aus der roten Beete wird der ganze Salat beim durchmischen rot eingefärbt (ich habe die Sauce zuerst nur löffelweise darüber gegeben ohne umzurühren) und der Endivienanteil ist deutlich größer als zu sehen ist.

And therefore I can recommend the
Sweet Summer Salad of Ottolenghi!
For this sweet salad Good nectarines and cheese are essential here. The beetroot dressing is dazzling red. Rather than keeping it discrete, as here, you can also toss the ingredients in it. Serves four.
1 small beetroot/1 kleine rote Beete
20g honey/ 20g Honig
15g Dijon mustard/Senf
1 garlic clove/ 1 Knoblauchzehe
25ml cider vinegar or white wine vinegar / 25ml Apfelessig oder Weissweinessig
Salt and pepper / Salz und Pfeffer
120ml olive oil, plus extra to finish/ 120 ml Olivenöl, und extra Olivenöl zum darüber sprenkeln
40g whole almonds, skin on, roughly chopped
40 g ganze Mandeln mit Schale, grob gehackt
10g butter
1 endive / 1 Endiviensalat
4 small nectarines; 20g rocket / 4 kleine Nektarinen; 20g Rucola
120g gorgonzola, broken into pieces / 120g Gorgonzola, in Stücke gebrochen
Preheat the oven to 180C/350F/gas mark 4. Wash the beetroot, wrap it in foil and bake for two hours, or until very soft, then peel.
To make the dressing, put the beetroot, honey, mustard, garlic, vinegar, salt and pepper in a food processor. Process for a few seconds, then incorporate a quarter of the oil at a time. It should be smooth and homogenous.
Sauté the almonds in butter and a pinch of salt for three to four minutes, then set aside to cool. Trim the base of the endive and carefully separate the leaves. Halve the nectarines, remove the stone and cut each half into three wedges. To assemble, spoon some dressing in a circle in the centre of a serving plate. Top with four or five endive leaves, hollow side up. Drizzle with oil and arrange the nectarines, rocket and cheese inside the leaves. Drizzle more oil around and about, and sprinkle with almonds.
Den Backofen auf 180 Grad vorheizen. Die rote Beete waschen, in Alufolie einpacken und für 2 Std. im Ofen langsam backen. Für das Dressing die rote Beete pürieren, Honig, Senf, Knofi, Essig, Salz und Pfeffer dazugeben bis die Sauce homogen ist.
Die Mandeln in Butter und einer Prise Salz 3 Minuten rösten, dann beiseite und kühl stellen. Den Endiviensalat waschen und die Blätter separieren, ich habe sie in kleine Stücke gezupft.
Die Nektarinen in Spalten schneiden, nachdem der Stein vollständig entfernt wurde. Ich habe die Nektarinen in eine flache Schale gelegt, die Endivienstücke darüber, dann die 2. Lage Nektarinen, wieder Endivie dazu. Das Dressing in Kreisen auf den Salat und die Nektarinen geben. Zum Schluss mit dem Käse, Rucola und den Mandeln bestreuen und dekorieren……

I love Ottolenghi’s recipes 🙂 I own 3 of his cookbooks and everything I‘ ve tried so far was just fab 🙂

I also have „Plenty“ (Genussvoll Vegetarisch) which would be the book I’d recommend for every „Ottolenghi“ newbie – vegetarian or not – because of the wonderful recipes 😉

yum yum yum, ich liiiieeeeb Endivien! Muss ich hier immer extra suchen weil sie wegen der Bitterkeit nicht so popular sind, aber ich mag sie eben deswegen. Habe sie schon mal mit Kase/Yugurt kombiniert und pommegranate, aber nicht nicht mit Pfirsichen. Und habe auch Birnen mal mit Kase und Nusse gemacht, muss mal diese Kombination versuchen. Im Sommer will ich oft nur Salate futtern und da ist Abwechslung angesagt 🙂 Danke fur die leckere Idee!
